Downers Grove’s new modern Latin eatery, Barbakoa, unveils their menu created by Chef Dudley Nieto. The menu features guacamoles and salsas, all made to order and served with crispy tortillas also known as totopos, ceviches with plaintain chips and homemade crackers, tacos with corn tortillas, small bites, a selection of tomalitos, wood grilled plates to share and three different paellas made to order.

Nieto grew up in Puebla, Mexico. His father, who grew up in Spain, was a force to be reckoned with in the kitchen, which provided Nieto with a strong sense of pride, knowing men could be great cooks. At 21 years old, Nieto intended to study medicine, but decided to pursue culinary school instead. After graduating from Le Cordon Bleu, Nieto brought his Mexican palate and classic French technique to kitchens in the Chicago area. He’s opened countless restaurants, from Adobo Grill and Chapuline in Chicago to Bar Taco, Rosa Mexicano-Lincoln Center and Dos Caminos Park Avenue in New York City. He finally returned home to the Midwest last year where under his guidance, new eatery Mezcalina has recently earned the distinction of being named one of 23 “Authentic Mexican Restaurants” by the Mexican government.

Jerry Kleiner and the Buona Family are proud to announce the opening of their new modern Latin eatery, Barbakoa. Located on Butterfield Road on the outskirts of Oakbrook, Barbakoa features Chef Dudley Nieto’s farm-to-table cuisine, bringing a modern twist to the heart of his homeland.

Nieto’s global menu includes Paellas made in a wood grill, Peruvian-style ceviche and specialty tacos with homemade tortillas. The signature stand out is the Barbakoa Short Rib Taco. It is made with short ribs which have been braised for 6 hours in a blend of ancho, guajillo and pasilla chiles from Oaxaca, Mexico and has been tenderized by using cactus pulque. All the menu items are created using the finest local and organic ingredients and sustainable meats, when possible.

The bar features over 100 tequilas, sangria made with homemade bitters and handcrafted cocktails created by renowned mixologist Adam Segar. Segar has created a signature margarita made with all natural and organic agave nectar, fresh squeezed lime juice and aged tequila.
