LM RESTAURANT GROUP UNVEILS TROQUET RIVER NORTH

LM Restaurant Group is proud to introduce their thriving bar concept, Troquet, to Chicago’s River North neighborhood. The bar, opening today, Thursday, January 9, is the newest member in the LM Restaurant Group family, which aims to create a thriving French dining scene in Chicago that mimics what exists in Paris today. Troquet River North is located on the ground floor of the Hotel Felix at 111 West Huron Street, at the intersection of Clark Street.

“In France today, young chef’s open Troquets and offer fun, fresh, local foods in a casual bar atmosphere.” says Partners Stephan Outrequin, Nicole Quaisser and Martial Noguier. Troquet River North will be a neighborhood French bar focusing on wine and craft cocktails. Acclaimed Managing Chef Partner Martial Noguier, along with Chef de Cuisine Benoit Fliou, is overseeing all culinary aspects of the new venture and will grace his patrons with food from all regions of France. Fliou, a Paris-native, has worked in some of the best Troquets in Paris for the past 15 years.

The menu, created by these French chefs include:

  • Gambas bisque with Saffron Garlic Cream
  • Mussels with Fresh Thyme, Olive Oil and Lemon in packages
  • Albacore tuna ‘plancha’ with fennel and carrottes puree and anis beurre blanc
  • Roasted quail, egg quail, savoy cabbage and finger potatoes fricassee, pancetta
  • Roasted pork belly, with homemade whole grain mustard mashed potatoes, arugula

In addition, the bar will feature a full beverage program with craft cocktails and a wine draft system featuring both reds and whites. About Martial Noguier

Martial Noguier brings more than 25 years of culinary experience to LM Restaurant Group. Originally hailing from Paris, France, Noguier worked for a number of French chefs before coming to the United States. He continued to gain experience while serving as Executive Chef and Chef de Cuisine for various prestigious hotels and fine-dining establishments such as Patina in California and Citronelle at the Latham Hotel in Washington D.C. before relocating to Chicago. Noguier served as Executive Chef and Corporate Chef at the venerable Pump Room in the Omni Ambassador East hotel as well Executive Chef roles at one sixtyblue and at the Sofitel Chicago Water Tower Hotel, which included Café de Architectes. Noguier was named a multi-time James Beard Foundation Award semi-finalist. He opened Bistronomic in February of 2011, which was received with wide acclaim.

Menu items, created by Chef/Partner Lee Ann Whippen, will satisfy brunch-goers’ “sweet tooth” and “meat tooth” by featuring house-made confections and house-smoked meats. LM BISTRO ANNOUNCES NOVEMBER CHEF PRIX FIXE

LM Bistro is pleased to announce their November Chef Menu created by Executive Chef Ben Reaves. The Chef Menu, which changes monthly, is comprised of four courses available for $39. Wine pairings are an additional $20.

Reaves’ November menu features Oysters with an Apricot and Chamomile Mignonette with fleur de sel and pepper paired with a NV Paul Louise Martin Brut Champagne to start. Guests will then enjoy a leek soup with house made sauternes mustard and parsley with a Foucher-Lebrun Sancerre Le Mont, and Rib eye with triple sear, roasted mushrooms and sauce bordelaise paired with the Chateau de Caillau Malbec. To finish, there are canella pastries with molasses, vanilla ice cream and all spice with a Vanilla Bourbon Sider. Photos available upon request.

Reaves, formerly the Chef de Cuisine at Brasserie 54 and Sous Chef at Premise, has been a member of the LM family since the summer of 2012. LM BISTRO ANNOUNCES NEW BEVERAGE PROGRAM

As LM Bistro spearheads a series of changes to elevate the restaurant to be more reflective of the River North neighborhood, General Manager Jasper Nowell and Beverage Director Maura Davis unveil a modern beverage program to parallel these change.

“The intention driving these updates is to compliment the new menu we recently unveiled this fall,” says Nowell. “We’ve added a new selection of cocktails, many of which are made with house infused liquors, and a more sophisticated, yet approachable wine list,”

Cocktail updates include the Bon L’Orange, $12, with homemade spiced rum, ginger and blood orange, the Pamplemousse, $13, with homemade grapefruit vodka, Chambord, chamomile and lemon, the Vanille, $11, with homemade vanilla vodka and chai, and the Chaleur, $10, with homemade rose vodka, honey, warm apple cider and citrus. 

Nowell, formerly of the Pump Room and RL, joined the LM Restaurant Group this past summer and since brought on Maura Davis for her extensive knowledge of wine and spirits. Davis helped to develop The Purple Pig, Davanti Enoteca and Violet Hour for Francesca’s Restaurant Group. Their new additions to the wine menu include a variety of reds, whites and sparkling by the glass and bottle. Glasses range from $10 to $14 and bottles range from $42 to $320. LM BISTRO ANNOUNCES NEW DINNER MENU FROM EXECUTIVE CHEF BEN REAVES

LM Bistro is pleased to announce their new dinner menu created by Executive Chef Ben Reaves. The new menu will focus on traditional French cuisine with a nod to the original LM Le Restaurant.
Reaves, formerly the Chef de Cuisine at Brasserie 54 and Sous Chef at Premise, has been a member of the LM family since the summer of 2012. A 2009 graduate of The California Culinary Academy and a 10-year veteran of the restaurant industry he is excited to continue to work with the prestigious LM Restaurant Group
“It’s long been my dream to participate in this kind of high-level culinary team and to provide exceptional food to a discerning clientele,” says Reaves.
A self-described “working chef” Reaves has a deep love for the act of cooking. Highlights from his new menu include Escargots, $13, with smoked pine nut, roasted grapes and a rosemary emulsion, Cauliflower Fritters, $12, with squash chutney, crème fraîche and pomegranate, and Celery Root Soup, $8, with pumpernickel, mustard caviar and parsley to start. Entrees include a pan-roasted whitefish, $23, with warm potato salad, pickled cabbage and kohlrabi, the Bistro Steak, $38, a seared filet mignon with potato mousse and pepper jus, and a Charred Lobster, available at market price, with mussels and braised fennel in a saffron broth. In addition, a prix-fixe, which will change seasonally, will be available for $39. The fall menu includes Smoked Trout and Whitefish with Garlic Croutons, an Escarole Salad, Braised Veal Cheeks and a Poached Pear dessert. Wine pairings are available for $20.

Live Music at LM Bistro

LM Bistro is pleased to announce their new Live Music series, beginning this September. The series will kick off on Friday, September 20 with Chicago based music and comedy act Amy & Freddy and will follow with Nan Mason and Terry Higgins on Saturday, September 21.

LM’s Live Music series is coordinated by Jasper Nowell, the new General Manager at LM Bistro. Nowell, formerly the Food & Beverage Manager at PUBLIC Hotel and Captain/Dining Room Manager at RL Restaurant, is excited about the new music series “LM Bistro is proud to partner with such great musical talent and is excited to kick-start Live Music at the bistro.”   

Amy Armstrong and Freddy Allen have been performing together for more than 15 years and have garnered a large following, both in the US and abroad. The duo has produced four albums together and are multi-recipients of both the Gay Chicago Magazine “After Dark” and Chicago Free Press “Pressie” awards.

Nan Mason is a professional singer and entertainer who has done commercials, jingles and motion pictures and has performed in countless venues in the US and abroad. Terry Higgins is a professional musician and composer known for his original compositions as well as his repertoire of American jazz standards and Contemporary jazz classics.               

Live music will be performed every Friday and Saturday evening. A full lineup will be posted on the LM Bistro website.

Chicago q, Chicago’s hottest spot for upscale barbecue is the perfect place to indulge in the season’s tomato bounty as Chef/Partner Lee Ann Whippen turns to fresh and local ingredients to enhance her dishes. 

In celebration of the season, Chicago q will bring back the Heirloom Tomato Salad, $8.25. This dish is prepared with the tomatoes from the weekly Division Street Market. These tomatoes are sliced thinly and served with basil chiffonade, fresh cracked pepper and a honey vinaigrette.

Chef Whippen also incorporates tomatoes in many of her salads including the Baby Greens Salad, $7.25, which is topped with smoked grape tomatoes and cornbread croutons. The tomatoes are smoked for 15 minutes at 225 degrees over Hickory and Applewood in Chicago q’s 1,000-pound Southern Pride smoker (kitchen tours are available upon request).

Chicago q is open for lunch, dinner and weekend brunch. Prices do not include tax and gratuity.

This Spring, Troquet invested in a small plot at The Montrose Green, a pop-up victory garden, to garden and plant their own vegetables and herbs to be used in the restaurant. This space, which was once unused private and city owned urban space was converted to a community based allotment garden located at 1819 West Montrose Ave.

This month, in honor of National Tomato Month, they have grown juicy cherry tomatoes. Chef de Cuisine Jason Myers has a special appetizer in mind for these and as they ripen he will also incorporate them into daily specials, including the vegetable of the day, soup of the day and quiche of the day. 

In addition to tomatoes, the restaurant is also growing mint, basil, oregano, rosemary, dill, thyme, squash, beets, parsley, green beans and lettuce.
