“In France today, young chef’s open Troquets and offer fun, fresh, local foods in a casual bar atmosphere.” says Partners Stephan Outrequin, Nicole Quaisser and Martial Noguier. Troquet River North will be a neighborhood French bar focusing on wine and craft cocktails. Acclaimed Managing Chef Partner Martial Noguier, along with Chef de Cuisine Benoit Fliou, is overseeing all culinary aspects of the new venture and will grace his patrons with food from all regions of France. “The intention driving these updates is to compliment the new menu we recently unveiled this fall,” says Nowell. “We’ve added a new selection of cocktails, many of which are made with house infused liquors, and a more sophisticated, yet approachable wine list,”

Cocktail updates include the Bon L’Orange, $12, with homemade spiced rum, ginger and blood orange, the Pamplemousse, $13, with homemade grapefruit vodka, Chambord, chamomile and lemon, the Vanille, $11, with homemade vanilla vodka and chai, and the Chaleur, $10, with homemade rose vodka, honey, warm apple cider and citrus.

Nowell, formerly of the Pump Room and RL, joined the LM Restaurant Group this past summer and since brought on Maura Davis for her extensive knowledge of wine and spirits. TOUR DE FRANCE DESSERT SPECIAL

In honor of the 100th Tour de France, Brasserie by LM in the South Loop and LM Bistro in River North will offer a special French dessert, the Paris Brest. This dessert is made of choux pastry, the light dough used in profiteroles and eclairs, and a praline flavored cream. This dessert will be available throughout the race from Saturday, June 29 through Sunday, July 21 for $5.

This decadent pastry gets its name from the Paris-Brest bicycle race, one of France’s oldest bike races. Created in 1891 to commemorate the race, it has a circular shape to represent the wheel. It gained popularity during the race because of its energy-giving high caloric value.

This year’s tour will be the Tour of France and for the second time in its history, the race will not cross over French boarders. Starting in Corsica and ending on the Champs-Elysees, this year’s course will be over 3,200 kilometers, approximately 1989 miles, through the Pyrenees and Alps mountain range with circuits throughout the country.

WHEN:         Available Saturday, June 29 through Sunday, July 21

COST:          The Paris Brest will be available for $5.
