LM RESTAURANT GROUP CELEBRATES NATIONAL COQ AU VIN DAY ON MARCH 22

This March, LM Restaurant Group celebrates National Coq Au Vin Day on Saturday, March 22. For the day, Managing Chef Partner Martial Noguier has prepared a special recipe, which will be available at all of the concepts.

LM Restaurant Group’s goal to bring distinctly French dining experience to Chicago area neighborhoods and Coq au vin is a dish that demonstrates what is good about French cuisine: simple hearty food, enjoyed with good wine an great friends. While eating coq au vin, time stops, which is why the dish has become timeless and loved by most.

The dish will be available for $21 at Bistronomic, $17 at Troquet River North, $13 at Troquet Ravenswood, and $16 at Brasserie by LM.

Coq Au Vin

Ingredients

3.5 lbs Chicken, free range or organic, cut into pieces

1 quart Red Wine, Full Bodied (Shiraz or Cabernet Sauvignon)

3 Carrots, Medium, Peeled and Sliced

2 Celery Sticks, Sliced

20 Baby Onions, peeled

1 tbsp Black Peppercorns, crushed

1 Bouquet Garni (parsley stalks, 2 baby leaves, 6 springs of thyme tied together)

2 tbsp Olive Oil

1 heaping tbsp. Plain Flour

1 tbsp Olive Oil

.5 lb Bacon, smoked streaky, ring removed, diced

1 lb Button Mushrooms

1.5 tbsp Unsalted Butter

1 tbsp Flat Parsley, chopped

Sea Salt

Black Pepper, freshly ground

Instructions

  1. In a pot, bring the red wine to a boil and flambé to remove the alcohol. Cool down.
  2. Separately mix the chicken pieces, carrots, celery, baby onions, peppercorns and bouquet garni together and pour the cooled red wine over. Cover with cling wrap, refridgerate and marinade for 24 hours.
  3. Place colander over a large bowl and drain the marinade. Leave to drain for a minimum of 1 hour to remove excess juices. Separate chicken, vegetables, and herbs, pat dry.
  4. Preheat the oven to 390°F. Sprinkle flour on baking tray and cook in the oven for 8 – 10 minutes until the flour has a wonderful pale brown color. Reduce the heat of the oven to 300°F.
  5. Heat 2 tablespoons of olive oil in a thick-bottomed large casserole dish, sear and color the chicken pieces for 5 – 7 minutes on each side. Then with a slotted spoon, transfer the chicken pieces on to a plate, In the same pan, add the drained vegetables and herbs. Lower the heat to medium high and cook for 5 minutes.
Spoon out the fat, add the flour and stir for a few seconds. Add the wine from the marinade little by little whiskey continuously to incorporate into the flour. Lastly, add the chicken pieces into the red wine sauce. The sauce should be smooth and coating the back of a spoon.
  6. Bring to a boil, skim, cover with a lid and cook in the preheated oven for 30 minutes. Place a large colander over a large saucepan and drain the coq au vin. Reduce the sauce by half. At this stage, you should be very pleased with yourself. Taste the sauce.
  7. Put the chicken pieces back into the sauce. Heat 1 tablespoon of olive oil in a non-stick pan, cook the diced bacon for 1 minute, add the button mushrooms and cook for 2 more minutes.
  8. Season with salt and pepper. Mix the diced bacon and button mushrooms into coq au vin. Sprinkle with parsley and serve the piping hot dish onto the table.

TROQUET RIVER NORTH BEVERAGE PROGRAM

Troquet River North, the thriving new bar concept from LM Restaurant Group, is proud to unveil their new beverage program. The program, overseen by new Beverage Director Maura Davis, features craft cocktails and a wine draft system with both red and white wines.

Davis, formerly the Bar Manager at Francesca’s Restaurant Group and Manager at Café Bionda, is a 2008 graduate of Indiana University and a 5-year veteran of the hospitality industry. She is excited about the opportunity to work with the newly expanded LM Restaurant Group, where organization and creativity are highly valued. “To have the support and resources to not only be creative, but to succeed, is amazing,” says Davis.

Among these resources is the wine draft system, the newest technology to allow diners to taste a chilled glass or red or white wine at a restaurant. The system allows for perfect temperatures in pours, by keeping whites at 45 degrees and reds around 55 degrees. The program allows for perfectly preserved wine to be poured at the peak of their freshness with superb taste-quality. Without needing a bottle, this system is also eco-friendly. Troquet River North features 10 wines on tap, available as a 6-ounce pour, a glass and a half, a 14-ounce half Troquet and a 24-ounce Troquet. Wines available include a Troquet House White Wine Blend and a House Red Bordeaux Blend, Sauvignon Blanc, Chardonnay, Pinot Gris, Cote du Rhone, Pinot Noir and Cabernet Sauvignon.

In addition, the neighborhood bar offers a seasonal rotation of craft cocktails created by Davis. All of these use seasonal and house made ingredients. Favorites include:

  • Lavende G’vine Flourasion Gin, St. Germain, Lavender Syrup and Mint
  • Rouge Troquet House Red, Mulled Cranberry and Port
  • Madame Troquet House White Wine, Peach and Belle de Brillet
  • Monsieu Maison Roche Cognac VS, Bauchant Liqueur and Mauresque

Full menu and photos available upon request.

In addition, Troquet River North offers Live Music on Wednesdays and on occasional weekends.

About Two Brothers Brewery

Two Brothers Brewing Company was founded by Jim and Jason Ebel in late 1996. The business was envisioned by the brothers based on their entry into entrepreneurship with The Brewer’s Coop, a retail store catering to home beer and wine making. In 1992 The Brewer’s Coop opened its doors in Naperville, IL selling retail ingredients and equipment for the homebrewing community. The more they were surrounded by brewing, the more passionate they became about opening their own microbrewery. In early 1996 they decided to take the plunge and started writing a business plan. Several months later their dream became reality. Two Brothers Brewing Company is still 100% family owned.

LM BISTRO ANNOUNCES NEW BEVERAGE PROGRAM

As LM Bistro spearheads a series of changes to elevate the restaurant to be more reflective of the River North neighborhood, General Manager Jasper Nowell and Beverage Director Maura Davis unveil a modern beverage program to parallel these change.

“The intention driving these updates is to compliment the new menu we recently unveiled this fall,” says Nowell. “We’ve added a new selection of cocktails, many of which are made with house infused liquors, and a more sophisticated, yet approachable wine list,”

Cocktail updates include the Bon L’Orange, $12, with homemade spiced rum, ginger and blood orange, the Pamplemousse, $13, with homemade grapefruit vodka, Chambord, chamomile and lemon, the Vanille, $11, with homemade vanilla vodka and chai, and the Chaleur, $10, with homemade rose vodka, honey, warm apple cider and citrus.

Nowell, formerly of the Pump Room and RL, joined the LM Restaurant Group this past summer and since brought on Maura Davis for her extensive knowledge of wine and spirits. Davis helped to develop The Purple Pig, Davanti Enoteca and Violet Hour for Francesca’s Restaurant Group. Their new additions to the wine menu include a variety of reds, whites and sparkling by the glass and bottle. Glasses range from $10 to $14 and bottles range from $42 to $320. Full menu available upon request.

In addition, LM Bistro reminds guests of their weekly live music on Fridays and Saturdays. For a full schedule of upcoming performances, visit their facebook page, www.facebook.com/LMBistro.
