WHAT:           This month’s Wine Bash features an array of wines from Oak Grove Reserve Wines, produced in California’s cool coastal regions. The tasting will include samples of the 2010 Reserve Zinfandel, 2010 Reserve Cabernet Sauvignon, 2010 Reserve Petite Sirah, 2011 Pinot Grigio, 2011 Reserve Sauvignon Blanc and 2011 Reserve Viognier. Wines are paired with festive wine snacks by Executive Chef John Coletta.

 

Quartino will feature these wines throughout the month of June at the special price of $20 per bottle.

 

Chef John Coletta will present festive seasonal fare including grilled zucchini with sun-dried tomatoes, roasted peppers, beet and walnut salad along with passed assorted Neapolitan pizze, bruschetta and Italian cured meats and assorted olives.

WHAT:           This month’s Wine Bash features an array of wines from Tramontana Vineyards, produced in the southern Italian wine region of Calabria. The tasting will include samples of Tramontana Due Mari Bianco (2010), Due Mari Rosso (2009), Vorea (2010), along with Poderi Sette Terre Pecorino (2010). Wines are paired with festive wine snacks by Executive Chef John Coletta.

This fall Quartino Ristorante brings the flavors of the season to the table with a hearty Paparazzi Pizza, available during lunch and dinner for $13.

The classic Neopolitan thin crust stone oven pizza features chicken, grilled zucchini, cheese fonduta, and fresh thyme and is perfectly paired with dry wines, both red and white.  Quartino’s recommendations include Gomba Roero Arneis for white and Franco Molina Langhe Nebbiolo for red, both produced in Piemonte.

Shaved Summer Vegetable Salad at Quartino

This summer Quartino Ristorante brings the garden to the table with a refreshing Shaved Summer Vegetable Salad with ExtraVirgin Olive Oil, available during lunch and dinner for $7.25.

The salad features an astonishing array of the season’s bounty, all delicately shaved and tossed with a first press Italian Extra Virgin Olive Oil, fresh lemon juice, salt and pepper.  The salad consists of red beets, celery hearts, fennel bulb, carrots, zucchini, yellow squash, asparagus, green beans, radish, chives, Italian parsley leaves, celery leaves and fennel throngs.

This month’s Wine Bash features an array of wines from Ironstone Vineyards and Winery in the Sierra Foothills of Murphys, California.  The tasting will include samples of Ironstone 2010 “Obsession” Symphony, 2009 Chardonnay, 2009 Old Vine Zinfandel and 2008Cabernet Sauvignon.  Wines are paired with festive snacks by Executive Chef John Coletta.

These wines will be offered throughout the month of September at Quartino at special pricing as the Featured Wines of the Month.

Quartino Celebrates Heirloom Tomatoes

This summer Quartino Ristorante brings the garden to the table with Heirloom Tomatoes in a simple format which allows the inborn natural flavor of each variety of Heirloom Tomato to be experienced by diners: Heirloom Tomatoes with Basil and Extra Virgin Olive Oil for $7.75.

Chef John Coletta prepares the dish by cutting the assorted cherry size Heirloom Tomatoes in half and tossing them with a first press Italian Extra Virgin Olive Oil. It is served with hand torn basil, sea salt and freshly ground black pepper and placed onto a bed of baby wild arugula for a refreshing, summery experience. Heirloom Tomatoes are best experienced with light fruit forward wines such as Pinot Grigio, Soave or Dolcetto D’ Alba.

Currently Quartino is purchasing Heirloom Tomatoes grown and shipped from California.  As Midwest Heirloom Tomato varietal’s become available they will utilize Heirloom Tomatoes grown in Michigan, Indiana and Illinois.

ABOUT: There are thousands of varieties of Family Heirloom Tomatoes and Commercial Heirloom Tomatoes available today. Family Heirloom Tomatoes have been preserved through the efforts of older generations. Younger generations are less interested in passing on these treasures. Consequently Family Heirloom Tomatoes are being preserved by hobbyist and Seed Saver Exchanges. Commercial Heirloom Tomatoes are being introduced by seed companies and have rescued them from the fate of extinction.

Heirloom Tomatoes can vary from the same variety from garden to garden and year to year. Soil type, weather, and climate can profoundly affect a tomato’s flavor and also its appearance. Seed sources also have an impact on the characteristics of a given tomato. If your seeds are far removed from the source of origin or if they were collected improperly you may experience subtle differences due to mutations that have altered it from the original strain.

Quartino Summer Seafood Special: Lobster Brodetto

WHAT: Quartino Ristorante presents a light and seasonal seafood special available this summer.  Executive Chef John Coletta isoffering a classic Italian seafood medley, Lobster Brodetto, featuring half of a fresh Maine Lobster, clams, calamari, shrimp, and octopus slowly simmered in a savory tomato broth.

A brodetto is an Italian seafood stew and is traditional of Italian seaport villages. Chef Coletta’s Lobster Brodetto pairs perfectly with a well-structured white wine like Garofoli Podium Verdicchio which is available by the carafe in quarter, half, or full liters.

Quartino Ristorante celebrates the spring with an exciting array of seasonal menu additions, perfect for enjoying al fresco in the impending warm weather on Quartino’s patio.  Quartino’s patio seats 85 and is open from 11:30am until 11:00pm. Spring additions include Spuntini, meaning little snack in Italian, with Spring peas, fior de latte, hazelnuts and mint for $5.00; and a new Wine Bar Plate featuring dates filled with gorgonzola dolce wrapped in house-made pancetta and honey for $6.75.
