Grilling Tips from Chef/Partner Lee Ann Whippen

Chicago q Chef/Partner Lee Ann Whippen is no stranger when it comes to grilling and in honor of National Grilling Month, the famed competitive barbecue chef shares some of her own personal secrets.

 

Prepping a Gas or Charcoal Grill

  • Never use flavored charcoal as it gives food a chemical taste rather than natural wood flavors.

  • Avoid lighter fluid and use starter sticks or a charcoal chimney to light your fire so food doesn’t take on tainted flavors.

Best Tools of the Trade

  • An instant read thermometer

You want one that reads internal temperature quickly without interfering with the grill temperature.

  • Bear claws

    These hard plastic claws help you achieve pulled pork without burning your hands.

  • A small cast iron pot

    You can put this right on the grill to heat up your sauce.

Tips for Grilling Protein

  • Soak wood chips in water for a half hour then drain and enclose them in piece of foil. Poke holes in foil with fork to allow smoke to escape. Place directly on coals to flavor your meats.

  • If saucing your meat, do in last 20 minutes of grilling. A lot of sauces containing sugar will burn before the inside of the meat is done.

  • Always let meat rest for 20 to 30 minutes before cutting.

Tips for Grilling Fish

  • Throw a cast iron skillet on your grill until it gets an ashy grey color then blacken your fish by dipping in clarified butter and sprinkling a generous amount of cajun seasoning.

  • When grilling fish, only use oily fish, like salmon, or select whole fish and steaks over filets as they hold up better.

Tips for Grilling Veggies

  • Use simple marinades like olive oil, lemon, garlic and fresh herbs.

  • Don’t marinate for more than 30 minutes or the vegetables will get soggy.

  • Cook on medium high heat so veggies get nice charred grill marks without being overcooked.

Tips for Grilling Desserts or Fruit

  • Use ripe seasonal fruits cut either lengthwise or crosswise to maximize size so it doesn’t fall through grates.

  • Grill fruits slowly so the natural sugars caramelize and become sweet.

  • Experiment with spices on fruit to create sweet desserts with a kick.

Fourth of July Weekend Events at Drop

Wednesday, July 3 – Sunday, July 7

This Independence Day, Drop will host events on Wednesday, Thursday and Sunday evening and offer Freedom Shots–a red, white and blue layered vodka shot topped with whipped Cream, for $2.

Beginning on Wednesday, July 3, the lounge will host wine night. The event will be from 8 p.m. to 10 p.m. and feature complimentary cheese plates from well-known Chicago chefs paired with tastings from the bar’s portfolio of wine. A charitable donation to PAWS Chicago is suggested for attendance.
