CELEBRATE NATIONAL OYSTER DAY

Featuring Rockefeller and Wood Grilled Preparations

 

WHAT:           Lincoln Park hot spots Gemini Bistro and Rustic House are pleased to celebrate National Oyster Day on Sunday, August 5 with a weekend of oyster specials.

At Gemini Bistro, Chef Jason Paskewitz offers his rendition of Oysters Rockefeller on Saturday, August 4 and Sunday, August 5. Paskewitz, an East Coast transplant grew up enjoying this classic oyster preparation and is excited offer guests his interpretation.  The sweet and briny Wellfleet varieties are topped with spinach, Pernod cream, smoky bacon and Parmesan cheese and baked in the oven until crispy. The oysters are market price and served 4 per order.

Chicagoans are also invited to Rustic House to taste Paskewitz’s Wood Grilled Oysters on Saturday, August 4 and Sunday, August 5. The grill imparts a distinctive smoky flavor that cannot be accomplished otherwise.  He keeps the oysters in their shells and places them on the coolest part of the grill, allowing them to cook all the way through without burning.  They are finished with a topping of cajun spices, fresh lemon juice and romano cheese.  The oysters are market price and served 4 per order.

Ryan O’Donnell, a chef at heart and a graduate of the culinary program at Kendall College Chicago, spent ten years in the kitchen before shifting his focus to roles in the “front of the house.”  Ryan gained experience as the Chef de Cuisine at Miraval, a five star spa resort near Tucson, Arizona and Keefer’s restaurant, where he worked in the kitchen before learning the operations side of the business in the dining room.  As General Manager/Partner of Gemini Bistro, O’Donnell has literally seen his culinary school business plan titled “Gemini Bistro” become a reality.

WHAT:           Rustic House, Lincoln Park’s hottest spot for fresh Midwestern dishes and quintessential American cuisine, celebrates summer with several new menu items.

With more than a decade of experience creating notable dishes in some of Chicago’s finest kitchens, Chef Jason Paskewitz’s menu at Rustic House showcases his experience and talent in executing straightforward, flavorful classics.

New dishes include Caprese Salad ($11) with heirloom tomatoes, watermelon and buffalo mozzarella;Pan Roasted Market Cod ($26) lemon herb crusted with summer veggies and cherry tomato vinaigrette;Wild Alaskan Halibut ($32) served with a sweet corn and Maine lobster succotash with pink-peppercorn beurre blanc; and Orecchiette Pasta ($21) with pulled Amish chicken, sun-dried tomatoes, chevre and sweet basil.

Princeton, NJ – May 29, 2012 – Miele is proud to introduce Chef Jason Paskewitz as its newest Table Artist. Chef Paskewitz is currently the Executive Chef at Gemini Bistro and Rustic House in Chicago. With over a decade of experience creating delicious dishes in some of Chicago’s finest restaurants, Chef Paskewitz’s seasonal menu showcases his experience and talent in executing straightforward, flavorful classics.

“I am very excited to be working with Miele as they introduce their new Better Living campaign. We share a similar food philosophy and commitment to forever improving our craft,” explained Chef Paskewitz. “While testing some of my recipes, I was completely enamored with the Miele Steam Oven and its ability to cook to perfection my pork belly ravioli. Not only was there no need to wait for a pot of water to boil, but I was able to prepare pasta for 20 people in just 12 minutes, with amazing results.”

On May 17, 2012, Chef Paskewitz shared his culinary vision through an innovative tasting menu, during a media event, at the Miele Gallery in Kenilworth. The evening showcased a regional menu highlighted by Miele’s suite of premium culinary appliances. Guests relished in the opportunity to cook alongside Chef Paskewitz, “touch the products and feel the brand” and witness for themselves the unlimited possibilities of what can be created with Miele appliances.

“We are thrilled to be working with Chef Paskewitz as part of our Better Living campaign. He is certainly a rising star in the culinary world and very talented,” explained Skyler Stevenson, Manager of Public Relations for Miele. “Our guests were especially intrigued to hear his insights about cooking and preparing dishes at home, whether it was with the Miele Steam Oven or the dual rotisserie in the MasterChef Oven. About Chef Jason Paskewitz
Born and raised in Queens, New York, Chef Jason Paskewitz developed an enormous respect for the culinary world as he started as a bus boy at his uncle’s restaurant.  Motivated to learn more about the restaurant world, he went on to graduate from the prestigious Culinary Institute of America in New York.

Paskewitz later adopted Chicago as his hometown and honed his skills with more than a decade of experience creating notable dishes in some of the city’s finest kitchens, including Wave, N9ne and Four Seasons.

In September 2009, Paskewitz found his true niche when he partnered with Ryan O’Donnell to open the Lincoln Park neighborhood gem, Gemini Bistro.  The celebrated, contemporary-American menu features seasonal ingredients with French and Mediterranean influences.  Gemini was awarded three stars from Phil Vettel of the Chicago Tribune, four stars from Time Out Chicago and was named one of the “Best New Restaurants” of 2009 by Chicago Magazine.  The restaurant is in extremely good company, as the Michelin Guide Bib Gourmand dubbed it a recipient of best-hidden culinary value in 2012.

In 2011, Paskewitz and O’Donnell struck again with Rustic House.  This time, Paskewitz aimed to provide urbanites with fresh Midwestern dishes.  The menu features classic American cuisine utilizing fresh, farm-to-table ingredients and an imported Rotisol French rotisserie.  Rustic House has quickly risen to meet expectations, as it also received three stars from Phil Vettel of the Chciago Tribune and was named one of the “Best New Restaurants” of 2012 by Chicago Magazine.

Jason continues to create seasonal, authentic, celebrated dishes for which he receives great recognition in Chicago.
